- 1 lb (454 g) small whole shrimp, shells on, thawed if frozen - 3 tbsp (45 g) unsalted butter - 2 cloves garlic, minced (about 6 g) - 1/4 cup (60 ml) dry white wine or water - 1 tbsp (15 ml) fresh lemon juice - 1/4 tsp (1.5 g) fine salt - 1/8 tsp (0.5 g) freshly ground black pepper - 2 tbsp (8 g) chopped fresh dill - 1 tbsp (4 g) chopped fresh parsley - Lemon wedges for serving - Crusty bread or boiled small potatoes for serving (optional)
1. Rinse shrimp briefly under cold water and pat dry with paper towels. Heat a large skillet over medium-high heat and add the butter. 2. When butter is foaming, add the minced garlic and sauté 30 seconds until fragrant but not browned. Add the shrimp in a single layer and cook 1 to 2 minutes per side until shells turn pink and flesh is opaque. 3. Pour in the white wine or water and lemon juice, sprinkle with salt and pepper, and toss for another 30 seconds to meld flavors and reduce the liquid slightly. 4. Remove from heat and stir in chopped dill and parsley. Transfer to a warm serving dish and serve immediately with lemon wedges and crusty bread or boiled potatoes.
