Ingredients

- 2 lb (900 g) cow foot and assorted trimmings, cut into bite-size pieces
- 1 cup (240 ml) red palm oil
- 1/2 cup (75 g) ugba (fermented oil‑bean seed), sliced
- 2 tbsp (20 g) ground crayfish
- 1 tsp (5 g) potash (kaun), dissolved in 2 tbsp (30 ml) warm water
- 1 small onion, thinly sliced, about 4 oz (115 g)
- 1–2 Scotch bonnet peppers, blended, approx. 10–20 g (adjust to heat preference)
- 1 tsp (5 g) ground white pepper or black pepper to taste
- 1 tsp (5 g) seasoning cube(s) or bouillon, crumbled
- 1/2–1 tsp (2–5 g) salt, to taste
- 1/4 cup (60 ml) reserved cooking stock (from boiling the cow foot), more as needed
- Utazi leaves for garnish, thinly sliced
- Thinly sliced red onion or chopped scallion for garnish

Instructions

1. Rinse the cow foot pieces and place in a large pot or pressure cooker with enough water to cover. Add one onion half and a pinch of salt. Cook until very tender: 2–3 hours simmering or 45–60 minutes in a pressure cooker. Reserve 1/2–1 cup (120–240 ml) of the cooking stock; drain the meat and set aside.
2. In a small bowl, dissolve the potash in 2 tbsp (30 ml) warm water and set aside until clear.
3. Warm the palm oil in a heavy skillet over low heat; do not let it smoke. Slowly add the dissolved potash mixture a little at a time while stirring—the oil will thicken and change texture to a glossy, slightly gelatinous sauce.
4. Stir in the ground crayfish, blended Scotch bonnet, ground pepper, and seasoning cube. Add 1/4 cup (60 ml) reserved cooking stock to loosen if the sauce is too thick. Taste and adjust salt or pepper.
5. Add the cooked cow foot pieces and ugba to the sauce, tossing gently to coat thoroughly. Simmer 3–5 minutes over low heat to blend flavors and heat through; add a splash more stock if needed to achieve a silky coating.
6. Transfer to a serving bowl, garnish with thinly sliced onion and utazi leaves, and serve immediately while hot.
