Ingredients

- 1 1/2 lb (680 g) lamb shoulder, trimmed and cut into 1-inch (2.5 cm) cubes
- 3/4 cup (75 g) walnuts, finely ground
- 1/3 cup (80 ml) pomegranate molasses (pomegranate paste)
- 3 tbsp (45 ml) plain yogurt
- 3 tbsp (45 ml) extra-virgin olive oil
- 4 garlic cloves, minced
- 1 cup (25 g) fresh cilantro leaves, packed, chopped
- 1/2 cup (20 g) fresh parsley, chopped
- 1/4 cup (15 g) fresh chives or green onions, chopped
- 1 tsp (5 g) ground turmeric
- 1 tsp (5 g) coarse salt, or to taste
- 1/2 tsp (2.5 g) freshly ground black pepper
- 1/2 tsp (2.5 g) crushed red pepper flakes (optional)
- 1 tbsp (15 ml) lemon juice
- 6-8 metal or soaked bamboo skewers
- 2 tbsp (30 ml) neutral oil for the grill or pan
- Sumac for finishing (optional)

Instructions

1. In a large bowl combine ground walnuts, pomegranate molasses, yogurt, olive oil, minced garlic, chopped cilantro, parsley, chives, turmeric, salt, pepper, crushed red pepper (if using), and lemon juice; mix into a thick marinade.
2. Add the lamb cubes to the bowl and toss thoroughly to coat. Cover and refrigerate 4–6 hours or preferably overnight to let the flavors penetrate.
3. If using bamboo skewers, soak them in water for 30 minutes. Thread the marinated lamb cubes onto skewers, leaving a little space between pieces for even cooking.
4. Preheat a grill to medium-high or heat a heavy cast-iron skillet over medium-high heat; brush grates or pan with 2 tbsp (30 ml) neutral oil to prevent sticking.
5. Grill or sear the skewers 3–4 minutes per side for medium (adjust time for desired doneness), turning to get a char on all sides. Baste once with remaining marinade during the last minute if desired.
6. Remove from heat and rest the skewers 3–5 minutes. Sprinkle with sumac if using and serve hot with steamed basmati rice or flatbread and a simple salad.
