Ingredients
2 cups (150 g) shredded green cabbage (or coleslaw mix)
1 Granny Smith apple, cut into thin matchsticks
2 celery stalks, thinly sliced
2 tbsp (30 ml) finely sliced red onion
2 tbsp (8 g) chopped fresh parsley
1 tsp celery seed
2 tbsp (30 ml) apple cider vinegar
1 tbsp (15 ml) Dijon mustard
1 tsp honey
2 tbsp (30 ml) extra-virgin olive oil
1 / 4 tsp kosher salt, plus more to taste
1 / 4 tsp freshly ground black pepper
Instructions
Add cabbage, apple, celery, red onion, parsley, and celery seed to a large bowl.
In a small bowl, whisk together apple cider vinegar, Dijon, honey, olive oil, salt, and pepper until emulsified.
Pour dressing over the slaw and toss until evenly coated.
Let sit 5–10 minutes to lightly soften and meld flavors; taste and adjust seasoning before serving.
