Ingredients
- 2 lb (900 g) cow foot (beef trotters), cleaned and cut into bite-size pieces
- 1 large onion, roughly chopped
- 1 cup (240 ml) red palm oil
- 1/8 tsp (0.6 g) potash (kanwa) dissolved in 2 tbsp (30 ml) water; or 1/8 tsp (0.6 g) baking soda as substitute
- 2 tbsp (30 g) ground roasted crayfish
- 2 tbsp (30 g) iru (locust beans) or 2 tbsp (30 g) fermented iru substitute
- 2 scotch bonnet peppers (or habanero), toasted and blended (adjust to heat preference)
- 1 tbsp (15 g) ground toasted ehuru / calabash nutmeg (or 1 tsp / 2 g grated nutmeg)
- 1 tsp (5 g) ground uziza seeds or black pepper
- 2 seasoning cubes (e.g., Maggi) or 2 tsp (10 g) bouillon powder
- 1/2 tsp (3 g) salt, or to taste
- 2 oz (50 g) utazi leaves, thinly sliced (or substitute with bitterleaf or spinach)
- 1/4 cup (60 ml) sliced palm kernel or toasted ground peanuts for garnish (optional)
- Thinly sliced red onion for garnish
Instructions
1. Step 1: Parboil the cow-foot pieces with the chopped onion and a pinch of salt in enough water to cover; simmer 2–3 hours until gelatinous and tender. Reserve about 1 cup (240 ml) of the cooking broth and drain the rest.
2. Step 2: In a small bowl, mix the dissolved potash solution with 2 tbsp (30 ml) of the reserved broth until slightly thickened; set aside.
3. Step 3: Heat the palm oil gently in a heavy skillet over low heat until it becomes glossy (do not fry), then remove from heat and let cool slightly.
4. Step 4: Stir the potash-broth mixture into the warm palm oil; it will splay and thicken—this is the base sauce for nkwobi.
5. Step 5: Add ground crayfish, iru, blended scotch bonnets, ehuru, and uziza seeds to the oil mixture; mix thoroughly until a vibrant, richly colored sauce forms. Adjust salt and seasoning cubes to taste.
6. Step 6: Toss the cooked cow-foot pieces into the sauce so they are evenly coated; add a few tablespoons of reserved broth if you need to loosen the sauce.
7. Step 7: Place coated cow-foot in a shallow serving bowl, top with thinly sliced utazi leaves and red onion, and sprinkle with toasted ground peanuts or palm kernel if using. Serve warm on communal plates.
