Ingredients
- 14 oz (400 g) flat rice noodles (fresh kwetiau)
- 2 tbsp (30 ml) vegetable oil
- 8 oz (225 g) boneless skinless chicken breast, sliced thin
- 8 oz (225 g) raw shrimp, peeled and deveined
- 2 large eggs, approx. 100 g total
- 3 cloves garlic, minced, approx. 0.3 oz (9 g)
- 2 shallots, thinly sliced, approx. 1.5 oz (45 g)
- 2 tbsp (30 ml) kecap manis (sweet soy sauce)
- 2 tbsp (30 ml) light soy sauce
- 1 tbsp (15 ml) oyster sauce
- 1 tsp (5 ml) fish sauce (optional)
- 2 cups (120 g) bean sprouts
- 2 cups (60 g) Chinese cabbage or bok choy, chopped
- 3 scallions, cut into 1-inch (2.5 cm) pieces, approx. 45 g
- 1 red bird’s eye chile or 1 tsp (5 g) sambal oelek, optional for heat
- 1 tbsp (15 ml) sesame oil
- Lime wedges for serving (optional)
Instructions
1. If using refrigerated or slightly clumped fresh noodles, loosen carefully by hand or briefly rinse with warm water to separate; drain well.
2. Heat a large wok or wide skillet over high heat until smoking slightly; add 1 tbsp (15 ml) vegetable oil. Add sliced chicken and stir-fry until nearly cooked through, about 2–3 minutes. Push to the side of the wok.
3. Add remaining 1 tbsp (15 ml) oil, then add shrimp and cook 1–2 minutes until just pink. Push shrimp and chicken to the side.
4. Add shallots and garlic to the center of the wok; fry 30–45 seconds until fragrant. Crack in the eggs and scramble quickly, mixing with shallots and garlic.
5. Add the drained noodles, kecap manis, light soy sauce, oyster sauce, and fish sauce if using. Toss vigorously to combine and heat noodles through, about 1–2 minutes. Add a splash of water (1–2 tbsp / 15–30 ml) if noodles seem dry.
6. Stir in bean sprouts, cabbage or bok choy, scallions, and optional chile or sambal; continue tossing until vegetables are just wilted, about 1 minute.
7. Finish with sesame oil, adjust seasoning to taste with extra kecap manis or soy sauce, and remove from heat.
8. Serve immediately with lime wedges on the side.
