Ingredients

- 1 lb (454 g) fresh wide rice noodles (sen yai), separated if stuck
- 12 oz (340 g) beef flank or sirloin, thinly sliced against the grain
- 8 oz (225 g) Chinese broccoli (gai lan), trimmed and cut into 2-inch (5 cm) pieces
- 2 large eggs
- 3 tbsp (45 ml) dark soy sauce
- 3 tbsp (45 ml) light soy sauce
- 1 tbsp (15 ml) oyster sauce
- 1 tbsp (15 g) granulated sugar
- 3 cloves (9 g) garlic, minced
- 2 tbsp (30 ml) vegetable oil or peanut oil
- 1/4 tsp (1 g) ground white pepper
- 2 tbsp (30 ml) water or stock for loosening the noodles if needed
- Pickled chilies in vinegar for serving
- Lime wedges for serving

Instructions

1. Prep: If noodles are refrigerated, gently loosen and separate them; if using dry noodles, soak or cook according to package directions then drain. Mix dark soy, light soy, oyster sauce, and sugar in a small bowl and set aside.
2. Heat wok: heat a large wok or heavy skillet over high heat until very hot. Add 1 tbsp (15 ml) oil and swirl to coat.
3. Sear beef: add sliced beef in a single layer, sear quickly 1–2 minutes until browned but not fully cooked through. Remove and set aside.
4. Aromatics and greens: add remaining 1 tbsp (15 ml) oil to the wok, add minced garlic and stir 10–15 seconds until fragrant. Add Chinese broccoli and stir-fry 1–2 minutes until bright green and slightly tender.
5. Noodles and sauce: push the greens to the side, add noodles to the wok, pour the sauce mixture over noodles, and toss vigorously to coat. Add 2 tbsp (30 ml) water or stock if noodles are dry to help distribute the sauce.
6. Eggs and combine: push noodles to one side of the wok, crack eggs into the cleared space and scramble quickly until just set, then toss eggs through the noodles. Return seared beef and any accumulated juices to the wok and stir-fry 1 more minute until beef is cooked and everything is well combined.
7. Season and finish: sprinkle ground white pepper, adjust seasoning with extra soy if needed, and stir briefly. The noodles should have some caramelized char from the high heat.
8. Serve: divide among plates and serve immediately with pickled chilies and lime wedges on the side.
