Ingredients

- 12 oz (340 g) fresh egg noodles (or 8 oz (225 g) dried, cooked and drained)
- 12 large shrimp, peeled and deveined, approx. 1 lb (454 g)
- 2 large eggs
- 3 tbsp (45 ml) kecap manis (sweet soy sauce)
- 1 tbsp (15 ml) light soy sauce
- 2 tsp (10 ml) sambal oelek or other chili paste (adjust to taste)
- 1 tsp (5 ml) toasted sesame oil
- 2 tbsp (30 ml) neutral oil (vegetable or peanut) for stir-frying
- 1 medium yellow onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup (70 g) shredded cabbage
- 1 medium carrot, julienned
- 1 cup (75 g) bean sprouts
- 3 scallions, sliced on the diagonal
- 1 tsp (4 g) granulated sugar
- 1 tbsp (15 ml) lime juice (optional)
- Salt and white pepper to taste
- Fried shallots or chopped cilantro for garnish (optional)

Instructions

1. If using dried noodles, cook according to package instructions, drain, and toss with a little oil to prevent sticking. If using fresh noodles, loosen them gently so they separate.
2. Whisk the eggs lightly in a small bowl. In another bowl, combine kecap manis, light soy sauce, sambal oelek, sesame oil, and sugar; set the sauce aside.
3. Heat 1 tbsp (15 ml) oil in a large wok or heavy skillet over high heat until shimmering. Add the shrimp and sear 1–2 minutes per side until just pink and cooked through. Remove shrimp and set aside.
4. Add the remaining 1 tbsp (15 ml) oil to the wok. Add the onion and garlic and stir-fry 1–2 minutes until fragrant and translucent.
5. Push the aromatics to one side of the wok, add the beaten eggs to the empty side, and scramble quickly until just set. Mix the eggs with the onions and garlic.
6. Add the noodles, cabbage, and carrot to the wok. Pour the sauce over and toss vigorously to coat and heat through, about 2–3 minutes. Add bean sprouts and cooked shrimp and toss another minute until everything is hot.
7. Taste and adjust seasoning with salt, white pepper, or extra kecap manis. Remove from heat and stir in lime juice if using.
8. Serve immediately topped with scallions and optional fried shallots or cilantro.
