Ingredients

- 8 beef patties, approx. 3.2 oz (90 g) each
- 8 American cheese slices, 1 oz (28 g) each
- 4 soft hamburger buns, about 2.5 oz (70 g) each
- 2 tbsp (28 g) unsalted butter, softened, for toasting buns
- 1 large tomato, sliced, about 8 oz (225 g)
- 1 small head iceberg lettuce, leaves separated, about 8 oz (225 g)
- 1 medium white onion, peeled and thinly sliced, about 6 oz (170 g)
- 8–12 dill pickle slices, about 3 oz (85 g)
- 1 tbsp (15 ml) vegetable oil or canola oil for griddle
- Kosher salt, 1 tsp (6 g) or to taste
- Freshly ground black pepper, 1/2 tsp (1.5 g) or to taste
- For the signature spread:
  - 1/2 cup (120 ml) mayonnaise
  - 3 tbsp (45 ml) ketchup
  - 2 tbsp (30 ml) sweet dill pickle relish
  - 1 tsp (5 ml) white vinegar
  - 1 tsp (4 g) granulated sugar
  - 1/4 tsp (1 g) onion powder

Instructions

1. Make the spread: whisk together mayonnaise, ketchup, pickle relish, vinegar, sugar, and onion powder in a small bowl; chill until assembly.
2. Shape and season patties: form ground beef into 8 thin patties, about 3.2 oz (90 g) each; season both sides lightly with kosher salt and black pepper.
3. Preheat griddle or large skillet over medium-high heat and brush with 1 tbsp (15 ml) oil.
4. Cook patties: working in batches if necessary, place patties on the hot griddle and cook 2–3 minutes until browned at the edges; flip, place a slice of American cheese on each patty, and cook another 1–2 minutes until cheese melts and patties are cooked through.
5. Toast buns: while patties cook, spread butter on cut sides of buns and toast cut-side down on the griddle until golden, about 1–2 minutes.
6. Assemble Double-Double style: on each bottom bun spread 1–2 tbsp (15–30 ml) of the signature spread, add a few lettuce leaves, 2 cheese-topped patties, a tomato slice, a few onion rings, pickle slices, then top with the bun.
7. Serve immediately while hot, with fries or your preferred sides.
