Ingredients

- 1 medium whole octopus, approx. 1.5 lb (680 g), cleaned
- 2 tbsp (30 ml) vegetable oil or coconut oil
- 1 large (8 oz / 225 g) onion, finely chopped
- 3 cloves (9 g) garlic, minced
- 1 tbsp (15 g) fresh ginger, minced
- 1–2 fresh red chiles, finely chopped (adjust to heat preference)
- 1 tbsp (14 g) curry powder (Zanzibari or mild curry blend)
- 1 tsp (5 g) ground cumin
- 1/2 tsp (2.5 g) ground turmeric
- 4 whole green cardamom pods, lightly crushed
- 2 whole cloves
- 1 can 14 fl oz (400 ml) coconut milk
- 1 cup (240 g) crushed or chopped tomatoes (canned or fresh)
- 1 tbsp (15 ml) tamarind paste or 1 tbsp (15 ml) lime juice
- 1 tsp (5 g) sugar (optional, to balance acidity)
- 1 tsp (5 g) sea salt, or to taste
- 2 tbsp (8 g) chopped fresh cilantro for garnish
- 1 tbsp (15 ml) lemon or lime juice, to finish

Instructions

1. If octopus is large or tough, simmer in lightly salted water until just tender, about 25–40 minutes depending on size; drain and set aside. Reserve cooking liquid if desired for thinning the curry.
2. Heat oil in a heavy saucepan over medium heat. Add chopped onion and sauté until translucent and beginning to brown, about 6–8 minutes.
3. Add minced garlic, ginger, and chopped chiles; cook 1–2 minutes until fragrant. Stir in curry powder, cumin, turmeric, crushed cardamom, and cloves; toast spices 1 minute.
4. Add chopped tomatoes and cook until they reduce slightly, about 5 minutes. Stir in coconut milk and tamarind paste (or lime juice) and bring to a gentle simmer.
5. Add the cooked octopus to the sauce and simmer gently for 10–15 minutes to allow flavors to meld and the octopus to absorb the sauce. If sauce is too thick, thin with up to 1/2 cup (120 ml) reserved octopus cooking liquid or water.
6. Taste and adjust salt, sugar, and acidity. Finish with lemon or lime juice and sprinkle chopped cilantro over the curry.
7. Serve hot with steamed rice, pilau, or a starch of choice.
