Ingredients
- 1 lb (454 g) fresh whole omena, cleaned and drained
- 1/2 cup (120 ml) vegetable oil for frying
- 1 medium onion, thinly sliced (about 6 oz / 170 g)
- 2 cloves garlic, minced (about 6 g)
- 2 medium tomatoes, chopped (about 8 oz / 225 g)
- 1 small fresh chili or 1 tsp (5 g) chili paste, to taste
- 1/2 tsp (3 g) salt, or to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1 tbsp (15 ml) fresh lemon juice
- 1/2 cup (120 ml) water or light stock
- 2 tbsp (8 g) fresh cilantro or coriander leaves, chopped
- Optional for service: lemon wedges and cooked ugali
Instructions
1. Rinse the omena under cold water and pat dry on paper towels; season lightly with a pinch of salt and pepper.
2. Heat the vegetable oil in a large skillet or shallow pan over medium-high heat. When hot, fry the omena in batches, avoiding overcrowding, until crisp and golden, about 2–4 minutes per side for small fish. Remove and drain on paper towels.
3. Pour off most of the frying oil, leaving about 2 tbsp (30 ml) in the pan. Reduce heat to medium, add the sliced onion and sauté until soft and translucent, 4–6 minutes. Add the garlic and chili and cook 30 seconds until fragrant.
4. Add the chopped tomatoes, 1/2 cup (120 ml) water or stock, salt, and pepper. Simmer gently until the tomatoes break down into a saucy consistency, about 6–8 minutes.
5. Return the fried omena to the pan, spoon the sauce over the fish, and simmer very gently 3–5 minutes to meld flavors (avoid breaking the fish). Stir in the lemon juice and chopped cilantro just before removing from heat.
6. Serve hot with ugali or plain steamed starch, garnished with extra cilantro and lemon wedges.
