Ingredients

- 8 cups (1.9 L) fresh whole cow’s milk
- 1/2 cup (120 ml) plain full-fat yogurt as starter
- 1 small lump hardwood charcoal, about 1 oz (28 g)
- 1 quart (1 L) sterilized calabash gourd or 1 quart (1 L) glass jar with lid
- 1 tsp (5 g) fine salt (optional)

Instructions

1. Sterilize your vessel: wash the calabash or jar with hot water and a little vinegar, then rinse and allow to dry. If using a calabash, ensure interior is clean and dry.
2. Prepare and sterilize the charcoal: on a heatproof surface or in a metal pan, heat the hardwood charcoal until glowing and covered with white ash, about 5–10 minutes. Using tongs, allow it to cool briefly until it is hot but not flaming.
3. Smoke the vessel: carefully press the hot charcoal briefly against the inside surface of the calabash or jar to deposit soot and smoke the interior; if using a jar, hold the charcoal in the jar until the inside is coated with a thin layer of soot. Extinguish any active flames and let the vessel cool to warm.
4. Heat the milk to a gentle boil to pasteurize, stirring to prevent scorching; then remove from heat and cool the milk to lukewarm, about 105–110°F (40–43°C).
5. Temper and inoculate: mix the 1/2 cup (120 ml) plain yogurt into a small amount of the lukewarm milk to loosen, then stir back into the full batch of milk. Add 1 tsp (5 g) salt if using.
6. Pour the inoculated milk into the smoked, sterilized vessel. Seal the vessel tightly with its lid or a cloth and keep it in a warm place (around 70–85°F / 21–29°C) to ferment.
7. Ferment 24–72 hours depending on temperature and desired sourness; check after 24 hours and again every 12 hours until it reaches the tangy consistency you prefer.
8. Once fermented, refrigerate the mursik to slow fermentation. Serve chilled or at room temperature in small cups as traditionally enjoyed.
9. For repeat batches, reserve 1/2 cup (120 ml) of finished mursik as starter for the next batch in place of yogurt and re-smoke the vessel as needed to maintain the characteristic smoky flavor.
