4 lb (1.8 kg) spare ribs 1 tbsp (15 ml) salt 1 tbsp (15 ml) black pepper 2 cups (480 ml) barbecue sauce 1 tbsp (15 ml) olive oil
1. Preheat your grill to medium-high heat. If using an oven, preheat to 300°F (150°C). 2. Season the spare ribs generously with salt and black pepper on both sides. 3. Place the ribs on the grill or in the oven, meaty side up. If grilling, turn occasionally to avoid burning and cook for about 1 hour, or until tender. If baking, cover with foil and roast for 2–3 hours. 4. In the last 15 minutes of cooking, brush the ribs generously with barbecue sauce. 5. Remove the ribs from the heat. Let them rest for a few minutes before cutting into individual ribs. Serve with extra barbecue sauce on the side.
