Ingredients
- 2 lb (900 g) starchy potatoes, peeled and grated
- 1 small onion, approx. 4 oz (115 g), finely grated
- 1 large egg, approx. 50 g
- 3 tbsp (24 g) all-purpose flour
- 1 tsp (6 g) salt
- 1/2 tsp (1.5 g) freshly ground black pepper
- 2 tbsp (8 g) fresh dill, chopped
- 3 tbsp (45 ml) vegetable oil, plus more as needed for frying
- 1/2 cup (120 ml) sour cream for serving
Instructions
1. Transfer the grated potatoes and onion to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible; reserve the potato starch that settles if desired.
2. In a large bowl, combine the squeezed grated potatoes and onion with the egg, flour, salt, pepper, and chopped dill; mix until the mixture holds together when pressed.
3. Heat 2 tbsp (30 ml) vegetable oil in a large skillet over medium heat. Form the potato mixture into patties about 2.5 in (6 cm) wide and 1/2 in (1 cm) thick.
4. Fry the patties in batches, 3–4 minutes per side, until deep golden and crisp, adding more oil as needed between batches; transfer to a paper towel-lined plate to drain.
5. Serve hot with a dollop of sour cream on the side and additional fresh dill if desired.
