Ingredients

- Dough:
- 3 cups (360 g) all-purpose flour
- 1 tsp (5 g) salt
- 1 tsp (5 g) sugar
- 1/2 cup (113 g) cold unsalted butter or rendered lamb fat, diced
- 3/4 cup (180 ml) cold water (adjust as needed)
- Filling:
- 1 lb (454 g) ground lamb
- 2 medium onions, very finely chopped, about 8 oz (225 g)
- 1 tsp (5 ml) ground cumin
- 1 tsp (5 ml) ground coriander
- 1 tsp (6 g) salt
- 1/2 tsp (2.5 g) freshly ground black pepper
- 2 tbsp (30 ml) vegetable oil
- 2 tbsp (8 g) chopped fresh cilantro (optional)
- Finishing:
- 1 large egg, beaten (about 50 g) for egg wash
- 2 tbsp (30 ml) sesame seeds or nigella seeds for sprinkling

Instructions

1. Make the dough: In a large bowl, combine 3 cups (360 g) flour, 1 tsp (5 g) salt, and 1 tsp (5 g) sugar. Cut in 1/2 cup (113 g) cold butter until mixture resembles coarse crumbs. Gradually add 3/4 cup (180 ml) cold water and mix to form a soft dough. Knead briefly, shape into a ball, wrap, and refrigerate for 30 minutes.
2. Prepare the filling: Heat 2 tbsp (30 ml) oil in a skillet over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Transfer to a bowl and let cool slightly. Mix with 1 lb (454 g) ground lamb, 1 tsp (5 ml) ground cumin, 1 tsp (5 ml) ground coriander, 1 tsp (6 g) salt, 1/2 tsp (2.5 g) black pepper, and 2 tbsp (8 g) chopped cilantro if using. The filling may be used raw (it will cook in the oven) or lightly seared for 3–4 minutes for a different texture.
3. Shape samsa: Preheat oven to 425°F (220°C). Divide dough into 6 equal pieces. On a lightly floured surface, roll each piece into a 6–7 inch (15–18 cm) circle. Place about 3–4 oz (85–115 g) of filling in the center of each circle. Fold into a triangle or rectangular pocket and seal edges tightly, pressing with fingers or a fork.
4. Bake: Place samsa on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with 2 tbsp (30 ml) sesame or nigella seeds. Bake in the preheated oven for 20–25 minutes until golden brown and the filling is fully cooked (internal juices should bubble).
5. Serve hot: Let cool slightly for 5 minutes, then serve warm. Samsa are traditionally enjoyed fresh from the oven and make a hearty main with a side of yogurt or fresh salad.
