Ingredients

- 1.5 lb (680 g) ground bison (about four 6 oz / 170 g patties)
- 4 burger buns (about 4 oz / 115 g each)
- 1 tsp (5 g) kosher salt
- 3/4 tsp (4 g) freshly ground black pepper
- 1 tbsp (15 ml) vegetable oil or canola oil for the grill or skillet
- 1 large onion, thinly sliced (about 8 oz / 225 g)
- 1 tbsp (15 g) butter for caramelizing onions
- 4 slices sharp cheddar cheese (about 4 oz / 115 g total), optional
- 4 lettuce leaves (about 40 g total)
- 1 medium tomato, sliced (about 6 oz / 170 g)
- 8 dill pickle slices (about 40 g)
- 4 tbsp (60 ml) mayonnaise
- 2 tbsp (30 ml) Dijon mustard
- 2 tbsp (30 ml) ketchup

Instructions

1. Make the caramelized onions: heat butter in a skillet over medium-low heat. Add the sliced onion and a pinch of salt and cook, stirring occasionally, until deeply golden and sweet, about 20–25 minutes. Remove from heat and keep warm.
2. Divide the ground bison into four equal portions (about 6 oz / 170 g each). Form each into a loose patty slightly larger than the bun, taking care not to overwork the meat. Season both sides with salt and pepper.
3. Preheat a grill or heavy skillet to medium-high. Brush the grill grates or skillet with vegetable oil to prevent sticking.
4. Cook the patties 3–4 minutes per side for medium (internal temperature about 140–145°F / 60–63°C). If using cheese, add a slice to each patty during the last minute of cooking and cover to melt. Avoid overcooking as bison is very lean.
5. Lightly toast the burger buns on the grill or in a toaster until golden.
6. Assemble each burger: spread 1 tbsp (15 ml) mayonnaise on the bottom bun and 1/2 tbsp (7.5 ml) mustard on the top bun (or combine to taste). Place lettuce, tomato slice, the bison patty with melted cheese, caramelized onions, and pickles. Add ketchup if desired and close with the top bun.
7. Serve immediately with your choice of sides and enjoy.
