Ingredients

- 16 oz (450 g) tvorog or farmer's cheese (well-drained)
- 1 large egg (about 50 g)
- 3 tbsp (45 ml) granulated sugar
- 1 tsp (5 ml) vanilla extract
- 1/2 tsp (2.5 g) fine salt
- 3–4 tbsp (45–60 g) all-purpose flour, plus extra for dusting
- 2 tbsp (30 ml) vegetable oil for frying
- 2 tbsp (30 g) butter for frying (optional, for flavor)
- 1/2 cup (120 g) sour cream, to serve
- 1/4 cup (80 g) fruit jam or preserves, to serve
- Fresh berries or sliced fruit, to serve (optional)

Instructions

1. Place the tvorog in a bowl and break up any large curds with a fork or pass through a fine sieve for a smoother texture. Add the egg, sugar, vanilla, and salt; mix until combined.
2. Stir in 3 tablespoons (45 g) of flour and mix to a soft but workable dough; if too sticky, add the remaining tablespoon (15 g). Chill the mixture 15–20 minutes to firm slightly.
3. Dust your hands and work surface with flour. Divide the dough into 8 equal portions and shape each into a 3/4–1 inch (2–2.5 cm) thick round patty about 3 inches (7–8 cm) across.
4. Heat the oil and butter in a large nonstick skillet over medium heat until hot but not smoking. Lightly dust each patty with flour, shake off excess, and place in the skillet without crowding.
5. Fry 3–4 minutes per side until deep golden brown and heated through, adjusting heat so they brown without burning. Transfer to a paper towel-lined plate to drain briefly.
6. Serve warm topped with sour cream and jam, and fresh fruit if desired.
