Ingredients

- 4 char fillets, skin-on, approx. 6 oz (170 g) each
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 g) kosher salt
- 3/4 tsp (3 g) freshly ground black pepper
- 4 tbsp (60 g) unsalted butter
- 2 tbsp (30 ml) fresh lemon juice
- Zest of 1 lemon, approx. 1 tsp (2 g)
- 2 cloves garlic, minced, approx. 0.3 oz (8 g)
- 2 tbsp (8 g) fresh dill or parsley, chopped
- 1/4 cup (60 ml) dry white wine or additional broth (optional)
- Lemon wedges, for serving

Instructions

1. Pat the fillets dry with paper towels. Brush both sides lightly with olive oil and season skin and flesh with salt and pepper. Let rest 10 minutes at room temperature.
2. Preheat a grill or heavy grill pan to medium-high (about 400°F / 200°C). If using a grill, oil the grates lightly to prevent sticking.
3. Place the fillets skin-side down on the hot grill. Grill without moving for 3–5 minutes until the skin crisps and the edges turn opaque.
4. Carefully flip the fillets and cook 2–4 minutes more, depending on thickness, until the flesh is just opaque and flakes easily with a fork. Total cook time will be about 6–9 minutes.
5. While the fish cooks, melt the butter in a small saucepan over low heat. Add lemon juice, lemon zest, minced garlic, and wine or broth if using. Warm gently until fragrant, then stir in the chopped dill or parsley.
6. Remove fillets from the grill, spoon the warm lemon-herb butter over each portion, and rest for 1 minute.
7. Serve immediately with lemon wedges.
