Ingredients
- 1 lb (454 g) ground pork
- 1/2 cup (50 g) fresh breadcrumbs
- 1/4 cup (60 ml) milk
- 1 large egg (approx. 50 g)
- 1 small onion, finely grated (approx. 3 oz / 85 g)
- 1 tsp (5 g) fine salt
- 1/4 tsp (1 g) white or black pepper
- 2 tbsp (30 ml) butter or oil for frying meatballs
- 3 tbsp (45 g) butter for the sauce
- 3 tbsp (24 g) all-purpose flour
- 2 tbsp (12 g) mild curry powder (adjust to taste)
- 2 cups (480 ml) chicken stock
- 1/2 cup (120 ml) heavy cream or whole milk
- 1 medium apple, peeled and diced (approx. 6 oz / 170 g)
- 1 tsp (4 g) sugar (optional, to balance acidity)
- Salt and pepper to taste
- 2 cups (uncooked) long-grain rice (370 g) to serve
Instructions
1. Combine 1/2 cup (50 g) breadcrumbs and 1/4 cup (60 ml) milk in a small bowl; let soak 5 minutes. In a mixing bowl, add ground pork, soaked breadcrumbs, egg, grated onion, 1 tsp (5 g) salt, and 1/4 tsp (1 g) pepper; mix gently until combined.
2. Form the mixture into small meatballs, roughly 1 inch (25 mm) diameter.
3. Heat 2 tbsp (30 ml) butter or oil in a skillet over medium heat. Fry meatballs in batches until golden on all sides but not fully cooked through, about 4–5 minutes per batch. Remove to a plate and keep warm.
4. In the same skillet, melt 3 tbsp (45 g) butter over medium heat. Whisk in 3 tbsp (24 g) flour and 2 tbsp (12 g) curry powder to form a roux; cook 1–2 minutes to remove raw flour taste.
5. Gradually whisk in 2 cups (480 ml) chicken stock until smooth. Bring to a simmer and cook until slightly thickened, about 4–5 minutes.
6. Stir in 1/2 cup (120 ml) heavy cream or milk and diced apple (approx. 6 oz / 170 g). Season with 1 tsp (4 g) sugar if desired, and salt and pepper to taste.
7. Return the browned meatballs to the sauce, reduce heat to low, cover, and simmer gently 8–10 minutes until meatballs are cooked through and flavors meld.
8. Meanwhile, cook the 2 cups (uncooked) long-grain rice (370 g) according to package instructions.
9. Serve the meatballs and curry sauce over rice, spooning extra sauce and apple pieces over each portion.
