Ingredients

- 1 goat head, cut into pieces, approx. 4 lb (1.8 kg)
- 4 cups (960 ml) water for boiling the head (plus more as needed)
- Juice of 1 lime or lemon for washing
- 1 medium onion, halved for boiling and sliced for garnish
- 2 bouillon cubes
- 1/2 cup (120 ml) red palm oil
- 1 tbsp (15 ml) ground ehuru (calabash nutmeg)
- 3 tbsp (45 ml) ground crayfish
- 2 scotch bonnet or habanero peppers, blended to a paste (or adjust heat)
- 1 tsp (5 ml) ground uziza seeds or black pepper (optional)
- 1 tsp (5 ml) salt or to taste
- 1 pinch kaun (potash) dissolved in 1 tbsp (15 ml) water, optional to help emulsify palm oil
- 1/4 cup (packed) utazi leaves, thinly sliced (approx. 10 g) or substitute with arugula in small amount
- 2 tbsp (30 ml) chopped fresh palm oil–compatible herbs (optional), e.g., scent leaf or parsley
- 2 tbsp (30 ml) vegetable oil (for initial frying if preferred)

Instructions

1. Clean and parboil goat head: Rinse goat head pieces well with water and lime juice, then place in a large pot with halved onion and 4 cups (960 ml) fresh water. Add bouillon cubes and bring to a boil, then reduce to a simmer and cook until meat is very tender and begins to fall from the bone, about 1.5–2 hours. Skim foam as needed. Remove pieces and reserve 1–2 cups (240–480 ml) of the cooking stock; discard onion halves.
2. Shred the meat: When cool enough to handle, pick the meat off the skull and larger bones into bite-size pieces, discarding inedible bone fragments. Set meat aside and strain and reserve additional stock if desired.
3. Prepare palm oil base: In a wide saucepan, gently warm the palm oil over medium heat until it becomes fluid and fragrant but not smoking, about 2–3 minutes. If using, add a small splash of vegetable oil to stabilize. Optionally add the dissolved potash solution, stirring quickly to emulsify and darken the oil slightly — this will create a glossy, thicker sauce.
4. Build the sauce: Stir ground ehuru and ground crayfish into the warmed palm oil, fry for 1 minute to bloom flavors. Add blended scotch bonnet pepper and continue to cook 1–2 minutes. If the mixture looks too thick, add 1/2 cup (120 ml) reserved stock to loosen.
5. Combine meat and simmer: Add the shredded goat meat to the spiced oil mixture, toss to coat, then add additional reserved stock (up to 1 cup / 240 ml) as needed to create a saucy consistency. Simmer gently 8–10 minutes to allow the meat to absorb flavors. Adjust salt and add ground uziza seeds or black pepper to taste.
6. Finish and serve: Remove from heat and fold in thinly sliced utazi leaves and chopped herbs to taste. Transfer to a serving bowl and garnish with sliced raw onion and extra utazi leaves. Serve hot with boiled yam, rice, or as part of a communal meal.
