Ingredients
- 6 godamba rotis (8-inch), approx. 12 oz (340 g) total, torn or chopped into strips
- 1 lb (454 g) boneless chicken thighs, cut into bite-size pieces
- 3 tbsp (45 ml) vegetable oil
- 1 large onion, thinly sliced
- 2 cloves (6 g) garlic, minced
- 1 tbsp (15 g) fresh ginger, minced
- 2 green chilies, sliced lengthwise
- 1 cup (120 g) shredded cabbage
- 1 cup (110 g) grated carrot
- 2 large eggs, approx. 100 g total, beaten
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (8 g) Sri Lankan curry powder or mild curry powder
- 1/2 tsp (2 g) ground turmeric
- 1/2 tsp (1 g) ground black pepper
- 1 tsp (4 g) sugar
- 1 tsp (5 g) sea salt or to taste
- 2 scallions, sliced
- 8–10 curry leaves (optional)
- Lime wedges, for serving
Instructions
1. Heat a large flat griddle or heavy skillet over high heat until very hot, then add 2 tbsp vegetable oil and swirl to coat.
2. Add sliced onion, garlic, ginger, and green chilies. Stir-fry 2–3 minutes until softened and aromatic. Add curry leaves if using.
3. Push aromatics to one side, add remaining 1 tbsp oil, then add chicken pieces. Season with curry powder, turmeric, black pepper, sugar, and salt. Stir-fry until chicken is cooked through and begins to brown, about 6–8 minutes.
4. Add shredded cabbage and grated carrot; toss and cook 2–3 minutes until vegetables are tender-crisp.
5. Push the mixture to the side, pour beaten eggs onto the empty surface, scramble quickly until just set, then mix into the chicken and vegetables.
6. Add chopped godamba roti strips and soy sauce. Using spatulas or cleavers (traditional), chop and toss continuously on high heat so the roti breaks up and incorporates with the filling; cook 3–5 minutes until some edges crisp and the mixture is well combined.
7. Stir in sliced scallions, adjust seasoning with salt or lime, and serve immediately with lime wedges.
