Ingredients
- 8 oz (225 g) mature Cheddar cheese, cut into wedges
- 8 oz (225 g) cooked ham or cold roast beef, thinly sliced
- 1 country loaf, about 20 oz (560 g), sliced
- 4 hard-boiled eggs, approx. 200 g total, peeled
- 1/2 cup (120 g) Branston-style pickle or chutney
- 1/2 cup (120 g) pickled onions
- 2 tbsp (30 g) unsalted butter at room temperature
- 2 apples, about 12 oz (340 g) total, quartered
- 1 cucumber, about 8 oz (225 g), sliced
- 8 cornichons or small gherkins (to taste)
- 2 tbsp (30 ml) English mustard or to taste
- 2 oz (60 g) mixed salad leaves (optional)
- Salt and freshly ground black pepper to taste
Instructions
1. On a large board or platter, arrange the Cheddar wedges, sliced ham or roast beef, and the sliced country loaf. Place the butter in a small dish alongside the mustard and Branston-style pickle.
2. Tuck the hard-boiled eggs, pickled onions, cornichons, apple quarters and cucumber slices around the cheeses and meats. Scatter the salad leaves if using, and season the apples and salad lightly with salt and pepper.
3. Serve immediately at room temperature or chilled, allowing diners to help themselves to bread, cheese, pickles and meats. Refresh accompaniments as needed for each plate.
