Entree: Ireland – Ulster / Northern Border – Ulster Fry (Hearty Northern Irish fried meal of eggs, bacon, sausages, soda bread and potato farls cooked together on a griddle)

Ingredients

- 6 slices back bacon (rashers), approx. 12 oz (340 g) total
- 4 pork sausages, approx. 8 oz (225 g) total
- 4 slices black pudding, approx. 6 oz (170 g) total
- 2 large eggs, approx. 3.5 oz (100 g) total
- 2 thick slices soda bread, approx. 8 oz (225 g) total
- 2 potato farls, approx. 8 oz (225 g) total (see potato farl quick mix below if making from scratch)
- 8 tbsp (113 g) unsalted butter, divided
- 2 tbsp (30 ml) vegetable oil
- 6 oz (170 g) mushrooms, halved or thickly sliced
- 1 medium tomato, halved or thickly sliced
- 1 cup (240 g) baked beans (optional)
- Salt and black pepper to taste
- Chopped parsley for garnish (optional)
- Quick potato farl mix (if making): 1 cup (225 g) mashed potato, 1 cup (125 g) self-rising flour, 2 tbsp (28 g) butter, pinch of salt

Instructions

1. If making potato farls, combine mashed potato, self-rising flour, softened butter and a pinch of salt into a soft dough. Divide into two, flatten into 1/2-inch (1.5 cm) rounds and set aside.
2. Heat a large heavy griddle or frying pan over medium heat. Add 1 tbsp (15 ml) vegetable oil and 1 tbsp (14 g) butter to coat.
3. Add the sausages first and cook turning occasionally until browned and nearly cooked through, about 10–12 minutes. Move sausages to a warm spot on the griddle.
4. In the same pan add bacon rashers and cook until browned and crisp to preference, 3–5 minutes per side. Remove and keep warm with sausages.
5. Add black pudding slices and fry 2–3 minutes per side until heated through and crisp at the edges; transfer to warm plate.
6. Add potato farls or prepared dough rounds to the griddle with 1 tbsp (14 g) butter and cook 4–6 minutes per side until golden and crisp. Remove and keep warm.
7. In remaining fat, add mushrooms and tomato halves, season with salt and pepper, and cook until softened and lightly caramelized, about 4–5 minutes. Push to the side.
8. Melt remaining butter on the griddle and fry the soda bread slices until golden on both sides, about 1–2 minutes per side. Keep warm.
9. Make a small well in the pan, add a little butter, and fry the eggs to your liking (sunny-side up or over-easy) for 2–4 minutes; season with salt and pepper.
10. Reheat sausages and bacon briefly if needed. Arrange eggs, bacon, sausages, black pudding, potato farls and soda bread on plates with mushrooms, tomatoes and baked beans if using. Garnish with chopped parsley and serve immediately.
