Ingredients
- 1 lb (450 g) whole muikku (vendace), cleaned (about 20–30 small fish)
- 3/4 cup (90 g) rye flour or coarse rye meal for coating
- 1 tsp (6 g) fine salt
- 1/2 tsp (2 g) ground black pepper
- 3 tbsp (45 ml) vegetable oil or light frying oil
- 2 tbsp (28 g) unsalted butter
- 1 lb (450 g) small boiled potatoes, cooked and kept warm (to serve)
- 1/2 cup (120 g) sour cream (or crème fraîche) (to serve)
- 1 lemon, cut into wedges (to serve)
- Fresh dill sprigs for garnish, optional
Instructions
1. Rinse and pat the cleaned muikku dry with paper towels. Season lightly with 1 tsp (6 g) salt and 1/2 tsp (2 g) pepper.
2. Place rye flour in a shallow dish. Dredge the fish lightly in the flour, shaking off excess.
3. Heat a large skillet over medium-high heat and add 3 tbsp (45 ml) oil and 2 tbsp (28 g) butter. When the fat is hot and shimmering, arrange the fish in a single layer without crowding.
4. Fry the muikku 2–3 minutes per side, or until the exterior is crisp and golden and the fish are cooked through. Work in batches if necessary and keep cooked fish warm on a plate lined with paper towels.
5. Taste and adjust seasoning if needed. Serve the fried muikku immediately with boiled potatoes, a dollop of sour cream, lemon wedges, and dill.
