Ingredients

- 1 whole young goat carcass, about 15 lb (6.8 kg), skinned but kept intact for stuffing (ask butcher to remove large bones while leaving meat attached)
- 20–30 small smooth river stones, thoroughly cleaned and heated until very hot
- 1/4 cup (60 ml) melted mutton fat or clarified butter
- 2 tbsp (36 g) coarse salt
- 2 tsp (4 g) ground black pepper
- 6 cloves garlic (18 g), crushed
- 2 large onions, quartered (about 12 oz/340 g)
- 2 tbsp (30 ml) soy sauce or a splash of fermented mare's milk (khorkhog variant, optional)
- Kitchen twine for sealing the skin
- Optional: bunch of fresh thyme or wild herbs to tuck into the cavity

Instructions

1. Prepare the goat: if not already done by a butcher, remove major bones carefully so the meat remains attached to the skin and forms a flexible pouch; leave smaller bones as needed for structure. Pat the meat and skin dry.
2. Rub the interior and exterior of the goat with melted mutton fat, then season liberally with coarse salt and black pepper. Stuff crushed garlic, onion quarters, and optional herbs into the carcass.
3. Heat the river stones in a heavy fire or in a very hot oven (500°F / 260°C) until they are smoking hot. Use tongs and gloves to handle stones safely.
4. Working quickly, place several of the hottest stones into the goat’s cavity among the aromatics so they contact meat. Add a few stones between layers of meat where possible. Seal the opening with kitchen twine so juices and steam are retained.
5. Traditional method: Suspend the sealed goat near hot coals or place it upright beside the fire on a rack and cover with embers, turning occasionally; cook for about 1.5–2 hours depending on size, checking for even cooking and replenishing embers as needed.
6. Oven/roasting adaptation: Place the sealed goat in a deep roasting pan, cover tightly with foil, and roast in a preheated 350°F (175°C) oven for about 2–2.5 hours, then finish uncovered over high heat or under broiler briefly to crisp the skin.
7. After cooking, allow the goat to rest 10–15 minutes to let juices settle. Carefully open the twine, remove any remaining hot stones with tongs, and carve or pull the meat from the skin and carcass.
8. Serve immediately family-style, discarding the stones and offering additional coarse salt and sliced onions on the side.
