Ingredients
- 3 cups (360 g) coarse rye flour
- 1 cup (125 g) all-purpose flour
- 1 tsp (6 g) salt
- 1 cup (240 ml) lukewarm water
- 2 tbsp (30 ml) melted butter
- 1 large egg, beaten (for sealing and brushing)
- 1 lb (450 g) whitefish or salmon fillets, skin on
- 8 oz (225 g) cured pork belly or salt pork, diced
- 1 small onion, thinly sliced (optional)
- 1 tsp (5 g) freshly ground black pepper
- Butter for brushing, 1–2 tbsp (15–30 g)
Instructions
1. Make the dough: In a large bowl, combine coarse rye flour, all-purpose flour, and salt. Add lukewarm water and melted butter, mixing until a firm, slightly sticky dough forms. Knead briefly until cohesive. Cover and let rest 30 minutes to hydrate the rye.
2. Prepare the filling: If desired lightly salt the fish fillets and let sit 10–15 minutes, then pat dry. Cut pork belly into small dice and season the fish and pork with a little pepper. Preheat the oven to 300°F (150°C).
3. Shape the loaf: On a generously floured surface, divide the dough into two portions — one slightly larger for the base. Roll the larger piece into a thick oval or round base about 1/4 in (6 mm) thick and large enough to line a small loaf pan or form a free-standing shell. Line the bottom and up the sides of the pan or form a thick rim on the base.
4. Layer the filling: Place a layer of fish skin-side down on the dough, add a single layer of diced pork and a few onion slices, then another layer of fish and pork until the pan is filled but not overstuffed. The top layer of fish should finish near the dough edge to avoid tearing when sealing.
5. Seal and finish: Roll out the remaining dough into a lid, place over the filling, and crimp edges tightly to seal. Brush the exterior with beaten egg and make a few small slits or a single hole to release steam. Optionally wrap the loaf in foil to prevent excessive browning.
6. Bake slowly: Place the kalakukko on a baking sheet and bake at 300°F (150°C) for 3.5–4 hours until the crust is firm and dark and the filling is cooked through. If wrapped, remove foil for the last 30 minutes to color the crust.
7. Rest and serve: Let the kalakukko cool to warm or room temperature; traditional kalakukko benefits from resting several hours or overnight to let flavors settle. Slice and serve thinly; buttered slices are customary.
