Ingredients
- 1 lb (454 g) ground beef
- 8 oz (227 g) ground pork
- 1 medium onion, finely grated (about 1 cup / 150 g)
- 1 large garlic clove, minced
- 1 large egg
- 2 tbsp (30 ml) plain breadcrumbs
- 1 tsp (5 g) sweet paprika
- 1/2 tsp (2.5 g) ground black pepper
- 1 tsp (5 g) salt
- 1/2 tsp (2.5 g) ground cumin (optional)
- 2 tbsp (30 ml) vegetable oil, plus more for grilling
- 4 small flatbreads or somun for serving (optional)
- 1 cup (240 g) sliced raw onion for topping
- 1/2 cup (120 g) ajvar or roasted red pepper relish for serving
- 2 tbsp (30 ml) sour cream or kajmak for serving (optional)
Instructions
1. Combine the ground beef and ground pork in a large bowl. Add the grated onion, minced garlic, egg, breadcrumbs, paprika, black pepper, salt, cumin if using, and 2 tablespoons vegetable oil. Mix gently until just combined; avoid overworking the meat.
2. Divide mixture into four equal portions and shape each into a flat round patty about 1/2 inch (1.3 cm) thick and roughly 4–5 inches (10–13 cm) across. Chill patties for 15–20 minutes to help them hold shape.
3. Preheat a grill or heavy skillet to high heat. Brush grill grates or skillet lightly with oil. Place patties on the hot surface and cook 4–6 minutes per side, pressing slightly once to form the characteristic flattened shape, until browned and cooked through (internal temperature about 160°F / 71°C).
4. Rest the patties 2–3 minutes. Serve each pljeskavica topped with sliced raw onions, a spoonful of ajvar, and sour cream or kajmak if desired, alongside flatbread or somun.
