Ingredients

- 1 lb (454 g) fresh crab pieces (shell-on) or equivalent picked crab meat
- 8 oz (225 g) callaloo leaves (or young taro/amaranth leaves), cleaned and chopped
- 1 cup (240 ml) coconut milk
- 2 tbsp (30 ml) vegetable oil or coconut oil
- 1 medium onion, finely chopped (about 6 oz / 170 g)
- 2 stalks scallion, sliced (about 1 oz / 30 g)
- 2 cloves (6 g) garlic, minced
- 1 medium tomato, chopped (about 5 oz / 140 g)
- 1 small scotch bonnet or habanero pepper, whole or pierced (adjust for heat)
- 1/2 cup (75 g) okra, sliced (optional)
- 1 tsp (1 g) fresh thyme leaves or 1/2 tsp (0.5 g) dried thyme
- 1/2 tsp (1 g) ground black pepper
- 1 tsp (6 g) salt, or to taste
- 1 cup (240 ml) water or seafood stock
- 1 tbsp (15 ml) fresh lime juice
- 1 small piece salted pork or smoked herring, about 2 oz (55 g), diced (optional, for authentic smoky depth)

Instructions

1. Rinse crab pieces and pat dry. If using whole crab, crack larger claws slightly to allow flavors to penetrate. Season lightly with 1/4 tsp salt and set aside.
2. Heat oil in a heavy pot over medium heat. Add diced salted pork or smoked herring if using and render a minute to release fat.
3. Add chopped onion and scallion and sauté 3–4 minutes until soft. Stir in minced garlic and cook 30 seconds until fragrant.
4. Add chopped tomato, thyme, and whole pierced scotch bonnet pepper; cook 2–3 minutes until tomato begins to break down.
5. Pour in coconut milk and water or stock, bring to a gentle simmer. Add okra if using, then carefully add crab pieces. Cover and simmer gently 12–15 minutes, turning crab once, until crab is cooked through and shells turn bright.
6. Remove lid and add chopped callaloo leaves in batches, stirring until wilted and incorporated. Simmer uncovered 4–6 minutes until callaloo is tender and flavors meld. If using picked crab meat, fold in during this step and heat through.
7. Season with remaining salt and black pepper; finish with fresh lime juice. Remove whole scotch bonnet before serving unless you prefer the dish very hot.
8. Serve hot as a main with steamed rice, boiled yams, or roasted breadfruit, spooning the coconut-callaloo broth generously over the accompaniment.
