Ingredients
2 heads Belgian endive, leaves separated
1 medium fennel bulb, cored and very thinly shaved (reserve fronds for garnish)
2 oranges, segmented and juice reserved
1 / 4 cup (40 g) golden raisins
3 tbsp (45 ml) white wine vinegar
1 tbsp (15 ml) honey or sugar
2 tbsp (30 ml) extra-virgin olive oil, plus more for finishing
1 tsp finely grated lemon zest
2 tbsp (20 g) toasted pine nuts
2 tbsp (8 g) chopped fresh mint or parsley
Pinch red pepper flakes
Sea salt to taste
Freshly ground black pepper to taste
Instructions
Make the agrodolce: In a small saucepan, bring the white wine vinegar, honey, a pinch of salt, and red pepper flakes to a gentle simmer. Stir in the raisins and cook 2–3 minutes until plumped and the liquid is slightly syrupy. Remove from heat and let cool 5 minutes.
Prepare the fennel and citrus: In a bowl, combine the shaved fennel with lemon zest, 2 tablespoons olive oil, a pinch of salt, and a few grinds of pepper. Add the orange segments and any reserved orange juice.
Dress and toss: Spoon the cooled raisin agrodolce (including syrup) over the fennel-orange mixture and add the chopped mint. Toss gently to combine and adjust seasoning with salt and pepper to taste.
Assemble: Arrange endive leaves on a platter. Spoon a heaping tablespoon of the fennel-orange mixture into each leaf.
Finish and serve: Sprinkle with toasted pine nuts, fennel fronds, and a light drizzle of olive oil. Serve chilled or at cool room temperature.
