Ingredients
- 12 oz (340 g) sea beans (samphire), trimmed and rinsed
- 3 tbsp (45 ml) extra-virgin olive oil
- 2 tbsp (30 ml) fresh lemon juice
- 1 large clove garlic, crushed
- 1/4 tsp (1.5 g) flaky sea salt, or to taste
- 1/8 tsp (0.5 g) freshly ground black pepper
- 2 tbsp (8 g) fresh flat-leaf parsley, finely chopped
- 2 tbsp (30 g) thinly sliced red onion (optional)
- 1/4 tsp (1 g) crushed dried Aleppo pepper or red pepper flakes (optional)
Instructions
1. Bring a large pot of salted water to a rolling boil. Add the sea beans and blanch for 1 to 2 minutes until they turn a brighter green and are just tender.
2. Immediately plunge the sea beans into a bowl of ice water to stop cooking, then drain well and pat dry with kitchen towels.
3. In a medium bowl, whisk together the olive oil, lemon juice, crushed garlic, flaky sea salt, and black pepper until combined.
4. Toss the drained sea beans with the dressing, then fold in the chopped parsley and sliced red onion if using. Taste and adjust salt and lemon as needed.
5. Transfer to a serving plate and sprinkle with crushed Aleppo pepper if desired. Serve at room temperature.
