Ingredients

- 2 whole firm white fish (such as kingfish, barramundi, or pomfret), about 10–12 oz (280–340 g) each, cleaned and scored
- 2 tsp (10 g) salt, divided
- 1 tsp (3 g) turmeric powder
- 2 tbsp (30 ml) lime juice or 1 tbsp (15 g) goraka paste (for traditional sourness)
- 2 tbsp (14 g) red chilli powder (adjust to taste)
- 1 tsp (3 g) ground coriander
- 1/2 tsp (1.5 g) fenugreek seeds, lightly crushed
- 1 tsp (3 g) curry powder (Jaffna or roasted style, optional)
- 4 cloves (12 g) garlic, crushed into paste
- 1 inch (6 g) piece ginger, crushed into paste
- 2 tbsp (30 ml) water (to make a marinade)
- 1/2 cup (60 g) rice flour or fine semolina for light coating
- 1/4 cup (30 g) rice flour + 2 tbsp (30 ml) water (for batter slurry, optional)
- 1/2 cup (120 ml) vegetable oil for shallow frying, plus extra for deep frying if desired
- 1 small red onion, thinly sliced, for serving
- 1/4 cup (10 g) fresh curry leaves
- 2 green chilies, slit lengthwise (optional)
- Lemon wedges for serving
- Fresh cilantro for garnish (optional)

Instructions

1. Rinse and pat the fish dry; make 3–4 diagonal cuts on each side. Rub 1 tsp (5 g) salt and 1/2 tsp (1.5 g) turmeric into the slits and cavity; set aside 10 minutes.
2. Prepare the marinade: combine remaining 1 tsp (5 g) salt, 1/2 tsp (1.5 g) turmeric, red chili powder, ground coriander, crushed fenugreek, curry powder (if using), garlic and ginger paste, lime juice or goraka paste, and 2 tbsp (30 ml) water to form a smooth paste. Rub this thoroughly over and into the slits and inside the cavity of each fish; marinate 20–30 minutes (longer for deeper flavor).
3. Just before frying, dust each fish lightly with 1/2 cup (60 g) rice flour or semolina; for a slightly thicker crust, dip each fish in a thin slurry of 1/4 cup (30 g) rice flour mixed with 2 tbsp (30 ml) water, then coat again with dry flour.
4. Heat vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F/175°C if using a thermometer). Add curry leaves and slit green chilies for a few seconds to flavor the oil, then remove and set aside.
5. Carefully place the fish in the hot oil and fry, turning once, until deep golden and cooked through, about 4–6 minutes per side depending on thickness. For larger fish you may need to fry 6–8 minutes per side or finish in a 375°F (190°C) oven for 5 minutes to ensure cooked through.
6. Transfer fried fish to a wire rack or paper towel-lined plate to drain briefly. Scatter the reserved crisped curry leaves and sliced red onion over the fish, squeeze lemon over the top, and garnish with cilantro if using.
7. Serve immediately with steamed rice, pol sambol or simple coconut sambal, and extra lemon or goraka on the side for extra tang.
