Ingredients
1 cup (240 ml) water
1 / 4 cup (60 g) unsalted butter
1 tbsp (12 g) granulated sugar (for dough)

1 cup (125 g) all-purpose flour
2 large eggs
1 tsp (5 ml) vanilla extract
About 4 cups (960 ml) neutral oil for frying (enough for 2 inches depth)
1 / 2 cup (100 g) granulated sugar (for coating)
2 tsp ground cinnamon
1 cup (6 oz / 170 g) semi-sweet chocolate chips
1 / 2 cup (120 ml) heavy cream
Pinch of salt (optional, for sauce)
Instructions
Make the cinnamon sugar: In a shallow bowl, mix 1/2 cup granulated sugar with 2 teaspoons cinnamon; set aside.
Start the dough: In a medium saucepan over medium heat, combine water, butter, 1 tablespoon sugar, and 1/4 teaspoon salt. Bring to a gentle simmer, then add flour all at once and stir vigorously with a wooden spoon until the mixture forms a smooth ball and a thin film coats the pan, 1 to 2 minutes. Transfer to a bowl and let cool 5 minutes.
Finish the dough: Beat in the eggs one at a time until fully incorporated and glossy, then mix in vanilla. The dough should be thick but pipeable.
Prep for frying: Heat 2 inches of oil in a heavy pot to 350°F. Line a baking sheet with paper towels and place a wire rack on top.
Fry: Transfer dough to a piping bag fitted with a large star tip (or use a zip-top bag with a corner snipped). Pipe 1- to 2-inch lengths directly into the hot oil, cutting with kitchen scissors. Fry in batches, turning occasionally, until puffed and golden, 2 to 3 minutes. Maintain oil around 350°F. Remove with a slotted spoon to the rack briefly, then toss warm churros in the cinnamon sugar.
Make the chocolate sauce: Place chocolate chips and a pinch of salt in a heatproof bowl. Warm cream in a small saucepan until steaming (not boiling); pour over chocolate. Let sit 1 minute, then whisk until smooth.
