Ingredients
- 1 1/2 lb (680 g) reindeer stew meat, trimmed and cut into 1-inch pieces
- 2 tbsp (30 ml) butter
- 1 tbsp (15 ml) vegetable oil
- 1 large onion, sliced (about 8 oz / 225 g)
- 2 cloves garlic, minced (approx. 6 g)
- 3 medium potatoes, peeled and cut into chunks, about 1 1/2 lb (680 g)
- 1 cup (240 ml) beef or game stock
- 1/2 cup (120 ml) water
- 2 bay leaves (approx. 1 g)
- 1 tsp (5 ml) dried thyme
- 1 tbsp (15 ml) red wine vinegar or lemon juice
- Salt and freshly ground black pepper to taste
Instructions
1. Pat the reindeer meat dry and season lightly with salt and pepper. Heat butter and oil in a heavy pot over medium-high heat and brown the meat in batches until well seared; remove and set aside.
2. Reduce heat to medium, add the sliced onion and cook until softened, 6–8 minutes. Add garlic and cook 1 minute more.
3. Return the browned meat to the pot, add the potato chunks, bay leaves, thyme, stock, and water. Bring to a gentle simmer.
4. Cover and braise over low heat for 1 1/2 to 2 hours, or until the meat is tender and potatoes are cooked through; stir occasionally and add a splash more water if necessary.
5. Stir in the vinegar or lemon juice, adjust seasoning with salt and pepper, remove bay leaves, and serve hot with traditional flatbread or boiled root vegetables.
