Ingredients
- 3 cups (375 g) all-purpose flour
- 1 tsp (7 g) active dry yeast (about one 7 g packet)
- 1 tsp (5 g) fine salt
- 1 tbsp (15 g) sugar
- 1 cup (240 ml) warm water
- 1/2 cup (120 ml) vegetable oil
- 6 tbsp (85 g) unsalted butter, softened for laminating
- 1 lb (454 g) ground lamb
- 2 medium onions, about 10 oz (280 g) total, finely chopped
- 1 tsp (2 g) ground cumin
- 1/2 tsp (2 g) freshly ground black pepper
- 1 tsp (5 g) salt, or to taste
- 1/4 cup (15 g) fresh parsley, finely chopped
- 1 large egg, beaten (for egg wash), approx. 50 g
- 2 tbsp (30 g) melted butter for brushing after baking
Instructions
1. In a large bowl combine flour, yeast, sugar, and salt. Mix briefly.
2. Whisk together warm water and vegetable oil, then gradually add to the flour mixture and stir until a rough dough forms.
3. Knead on a lightly floured surface until smooth and elastic, about 6–8 minutes. Cover and let rest 30 minutes.
4. Meanwhile make the filling: in a skillet over medium heat, add a splash of oil and sauté chopped onions until soft and translucent, about 6–8 minutes. Let cool slightly.
5. In a bowl combine ground lamb, sautéed onions, cumin, black pepper, salt, and parsley. Mix gently but thoroughly; do not overwork.
6. Divide rested dough into 8 equal pieces. Roll each piece into a thin rectangle about 6x8 inches (15x20 cm). Spread a thin layer of softened butter over each rectangle, then fold into thirds lengthwise to create layers. Roll each folded piece lightly to flatten.
7. Cut each layered strip into two rectangles and place 2–3 tablespoons of filling near one edge. Shape into a triangle or turnover by folding corners to enclose the filling, sealing edges by pinching.
8. Place assembled samsa on a parchment-lined baking sheet. Brush with beaten egg. Let rest 15 minutes while you preheat the oven.
9. Preheat oven to 400°F (200°C). Bake samsa until golden and cooked through, 22–28 minutes depending on size.
10. Remove from oven and brush immediately with melted butter. Serve warm with yogurt or a simple salad.
