Ingredients
4 bone-in pork chops, about 2 lb total (907 g total)
2 ripe peaches, peeled and sliced
1 / 4 cup (50 g) brown sugar
1 / 4 cup (60 ml) apple cider vinegar
1 tbsp (15 ml) Dijon mustard
2 tsp (10 ml) olive oil
Salt and pepper to taste
Instructions
1. Season the pork chops with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side or until they are golden brown and cooked through. Remove them from the skillet and keep warm.
2. In the same skillet, add sliced peaches, brown sugar, apple cider vinegar, and Dijon mustard. Stir to combine, scraping any browned bits from the bottom of the pan. Cook for about 5-7 minutes, until the peaches are soft and the sauce has thickened slightly.
3. Return the pork chops to the skillet, spooning some of the peach glaze over each chop. Cook for an additional 2-3 minutes to allow the flavors to meld together. Serve warm, with extra peach glaze spooned over the top. Enjoy!
