Ingredients

- 4 firm white fish steaks or fillets, approx. 6 oz (170 g) each (cod, grouper, or tilapia)
- 3 tbsp (45 ml) palm oil
- 1 large onion, finely chopped, approx. 8 oz (225 g)
- 3 cloves garlic, minced, approx. 0.3 oz (8 g)
- 1 tbsp (15 g) ground njansang (African spice; also called njangsa)
- 1 tbsp (8 g) roasted ground black pepper (or to taste)
- 1 tbsp (15 g) toasted ground coriander or substitute if njansang unavailable
- 2 tbsp (30 g) tomato paste
- 1 cup (240 ml) fish stock or water
- 1 tbsp (15 g) dried shrimp/crayfish powder (optional)
- 1 bouillon cube (Maggi or similar)
- 1 tsp (5 g) salt, adjust to taste
- 2 tbsp (30 ml) freshly squeezed lime or lemon juice
- 2 green onions, sliced, approx. 0.5 oz (15 g)
- 2 tbsp (8 g) chopped fresh basil or parsley for garnish

Instructions

1. Rinse the fish steaks and pat dry; season lightly with salt and a pinch of roasted ground black pepper and set aside.
2. In a small dry skillet over medium heat, quickly toast the njansang and roasted black pepper for 30–60 seconds to wake the aroma, then grind finely if whole. Combine with toasted coriander; set aside.
3. Heat the palm oil in a heavy skillet or Dutch oven over medium heat until hot. Add the tomato paste and cook, stirring constantly, until it darkens and slightly chars at the edges, about 5–7 minutes—this fuels the characteristic dark color of the sauce.
4. Add the chopped onion and sauté until softened, about 4–5 minutes. Stir in the garlic and cook 1 minute.
5. Sprinkle in the toasted spice mixture and dried shrimp powder if using; cook and stir 1–2 minutes to bloom the spices in the oil.
6. Pour in the fish stock (or water) and crumble in the bouillon cube. Bring the sauce to a gentle simmer.
7. Gently nestle the fish steaks into the sauce, spoon sauce over the fish, cover, and simmer over low heat for 12–15 minutes for 6 oz (170 g) steaks, or until fish is opaque and cooked through. Do not over-stir to avoid breaking the fillets.
8. Stir in the lime juice, adjust salt and pepper to taste, and sprinkle sliced green onions and chopped basil or parsley over the top before serving.
9. Serve Mbongo Tchobi hot with steamed rice, boiled plantains, or fufu.
