Ingredients

- 1 lb (454 g) beef chuck, thinly sliced across the grain
- 3 cups (360 g) all-purpose flour
- 1 cup (240 ml) warm water (plus more as needed)
- 1 tsp (6 g) salt for dough
- 1 tbsp (15 ml) vegetable oil for dough
- 2 tbsp (30 ml) vegetable oil for frying
- 1 medium yellow onion, thinly sliced
- 2 medium carrots, julienned
- 2 cups (160 g) green cabbage, thinly sliced
- 2 cloves garlic, minced
- 2 cups (480 ml) beef broth or water
- 2 tbsp (30 ml) soy sauce
- 1 tsp (5 g) ground black pepper
- 1 tsp (5 g) salt, or to taste
- 2 tbsp (30 ml) butter or additional oil for finishing
- 2 green onions, sliced, for garnish

Instructions

1. Make the noodle dough: combine flour, 1 tsp salt, 1 tbsp oil, and warm water in a bowl; mix to form a smooth, elastic dough, adding water tablespoonwise if dry. Knead 5–7 minutes, cover, and rest 20 minutes.
2. Divide dough into 2 portions, roll each portion thin (about 1/8 inch / 3 mm) on a floured surface, brush lightly with oil, and pan-fry each sheet in an oiled skillet over medium heat until set and lightly browned on both sides; remove and cut into 1-inch (2.5 cm) wide strips to form flat noodles.
3. Heat 2 tbsp vegetable oil in a large heavy pan or wok over medium-high heat; add sliced beef and stir-fry until browned; remove and set aside.
4. In the same pan add onion and carrots; stir-fry 3–4 minutes until starting to soften, then add cabbage and garlic and cook another 2 minutes.
5. Return beef to the pan, add soy sauce and black pepper, then pour in beef broth; bring to a simmer.
6. Add the prepared noodle strips to the simmering mixture, gently tossing or folding to combine so noodles absorb the broth; cover and simmer 5–7 minutes until noodles and vegetables are tender and most liquid is absorbed.
7. Stir in butter or additional oil for gloss, check seasoning and add salt if needed, garnish with sliced green onions, and serve hot.
