Ingredients
- 4 steaks (sirloin or ribeye), approx. 8 oz (225 g) each
- 12 large prawns, approx. 1 lb (454 g) peeled and deveined
- 2 tbsp (30 ml) olive oil for steaks
- 1 tbsp (15 ml) olive oil for prawns
- 4 tbsp (57 g) unsalted butter, divided
- 3 cloves (9 g) garlic, minced, divided
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tsp (5 g) Dijon mustard
- 2 tbsp (30 ml) lemon juice, plus lemon wedges to serve
- 1/2 tsp (1.5 g) smoked paprika
- 2 tbsp (8 g) chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
1. Remove steaks from the refrigerator 20–30 minutes before cooking to come toward room temperature. Pat dry and season both sides generously with salt and pepper.
2. In a small bowl, mix 1 tbsp (15 ml) olive oil, 1 tbsp (15 ml) Worcestershire sauce, and 1 tsp (5 g) Dijon mustard. Brush or rub this lightly onto both sides of the steaks.
3. Heat a large heavy skillet or cast-iron pan over high heat until very hot. Add 2 tbsp (30 ml) olive oil. Sear steaks 3–4 minutes per side for medium-rare (adjust time for thickness and desired doneness). During the last minute of cooking, add 2 tbsp (28 g) butter to the pan and spoon the melted butter over the steaks. Transfer steaks to a cutting board, tent with foil, and rest 5–7 minutes.
4. While steaks rest, wipe the pan lightly and return to medium-high heat (or use a second skillet). Add 1 tbsp (15 ml) olive oil and 2 tbsp (28 g) butter. When butter foams, add half the minced garlic (about 1–2 cloves) and cook 30 seconds until fragrant.
5. Add 12 large prawns (approx. 1 lb/454 g) to the pan in a single layer. Season with salt, pepper, and 1/2 tsp (1.5 g) smoked paprika. Cook prawns 1–2 minutes per side until opaque and just cooked through.
6. Add 2 tbsp (30 ml) lemon juice and the remaining 2 tbsp (28 g) butter to the prawns, stirring until butter melts and forms a glossy sauce. Stir in 2 tbsp (8 g) chopped parsley and the remaining minced garlic, cook 15–30 seconds more. Taste and adjust seasoning.
7. To serve, place one steak per plate and spoon a portion of the garlic-lemon prawns and butter sauce over each steak. Garnish with lemon wedges and extra parsley.
