Meanwhile, mix the ground roasted peanuts, vegetable oil, ground red chili, ground coriander, black pepper, and cloves if using; add 2 tbsp water to form a thick, spreadable paste (kilishi coating). 3. Remove beef from the marinade and pat slices lightly to remove excess moisture. Arrange slices on a wire rack over a baking sheet in a single layer. 4. Dry the beef in a low oven at 200°F (95°C) for 2–3 hours, turning once, until the slices are firm and slightly dehydrated. (If you have a dehydrator, use according to manufacturer instructions.) 5.
