Ingredients

- 3 cups (360 g) fine maize meal (cornmeal)
- 6 cups (1,440 ml) water, plus additional for thinning
- 1/4 cup (30 g) sorghum or millet malt (ground) as fermentation starter (or 1/2 cup (120 ml) active plain yogurt as alternative starter)
- 2 tbsp (25 g) sugar (optional, to feed fermentation and round flavor)
- 1/2 tsp (3 g) salt, or to taste
- 1–2 cups (240–480 ml) cold water for thinning when serving (optional)

Instructions

1. In a medium saucepan, bring 6 cups (1,440 ml) water to a gentle boil. Whisk a small cup of the water with the maize meal to make a smooth slurry to prevent lumps.
2. Reduce heat to low–medium and slowly whisk the maize slurry into the boiling water. Continue to cook, stirring frequently, until the porridge thickens and is smooth, about 8–12 minutes.
3. Stir in the sugar (if using) and salt. Remove from heat and let the porridge cool to warm (about 100–110°F / 38–43°C) — warm but not hot so the starter will survive.
4. Once warm, whisk in the sorghum or millet malt starter (or yogurt) until fully incorporated. Transfer the mixture to a clean, nonreactive bowl or jar and cover with a clean cloth or lid, leaving a small vent for gases.
5. Leave the mixture at room temperature to ferment for 24–48 hours, until it develops a pleasantly sour aroma and tangy taste. Fermentation time depends on ambient temperature; warmer climates ferment faster.
6. After fermentation, stir the emahewu. If it is too thick for your preference, thin with 1–2 cups (240–480 ml) cold water to reach a drinkable porridge consistency. Refrigerate to slow fermentation if not serving immediately.
7. Serve emahewu chilled or at room temperature as a filling breakfast or light meal. It can be enjoyed plain or with porridge accompaniments like fruit, nuts, or a savory relish.
