Ingredients

- 1 lb (454 g) Antarctic krill, thawed and drained
- 2 tbsp (30 ml) vegetable oil
- 1 tsp (5 ml) sesame oil
- 1 medium yellow onion, thinly sliced
- 1 large carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup (100 g) snow peas
- 3 cloves garlic, minced
- 1 tbsp (6 g) fresh ginger, minced
- 3 scallions, sliced on the diagonal
- 3 tbsp (45 ml) soy sauce
- 1 tbsp (15 ml) oyster sauce
- 1 tsp (5 ml) fish sauce (optional)
- 1 tbsp (15 ml) rice vinegar or lime juice
- 1 tsp (4 g) sugar
- 1/4 tsp (1 g) crushed red pepper flakes or to taste
- 2 tbsp (30 ml) water or low-sodium broth
- 1 tbsp (15 g) cornstarch mixed with 2 tbsp (30 ml) water (slurry)
- Salt and freshly ground black pepper to taste
- Cooked steamed rice or stir-fried noodles for serving

Instructions

1. Pat the krill dry with paper towels and season lightly with salt and pepper. Mix soy sauce, oyster sauce, fish sauce (if using), rice vinegar, sugar, water or broth, and red pepper flakes in a small bowl; set sauce aside.
2. Heat the vegetable oil in a large wok or heavy skillet over high heat until shimmering. Add sesame oil.
3. Add the onion and carrot and stir-fry 1–2 minutes until they begin to soften. Add bell pepper and snow peas and continue to stir-fry 1–2 minutes until vegetables are crisp-tender.
4. Push vegetables to the sides of the wok, add a little oil to the center if needed, then add garlic and ginger and stir 20–30 seconds until fragrant.
5. Add the krill and stir-fry rapidly 2–3 minutes until krill are just cooked through and opaque. Krill cook very quickly; avoid overcooking.
6. Pour the reserved sauce over the krill and vegetables and stir to combine. Give the cornstarch slurry a quick stir and add it to the wok, cooking 30–60 seconds until the sauce thickens and coats the ingredients.
7. Stir in scallions, adjust seasoning with salt and pepper, and remove from heat. Serve immediately over steamed rice or noodles.
