Ingredients
- 1 lb (454 g) firm shark fillets, skinned and deboned
- 2 lb (900 g) potatoes, peeled and cut into 1/2-inch (1.3 cm) dice
- 2 tbsp (30 ml) vegetable oil
- 2 tbsp (30 g) unsalted butter
- 1 medium onion, finely chopped (about 6 oz / 170 g)
- 1 green bell pepper, seeded and diced (about 6 oz / 170 g)
- 3 scallions, thinly sliced (about 30 g)
- 2 cloves garlic, minced (about 6 g)
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (15 ml) tomato paste
- 1 tbsp (15 ml) lemon juice
- 1/4 cup (15 g) fresh parsley, chopped
- 1 tsp (5 g) dried thyme or 1 tbsp (3 g) fresh thyme leaves
- 1/2 tsp (3 g) freshly ground black pepper
- 1 tsp (6 g) salt, or to taste
- Hot pepper sauce to taste, optional
- Lemon wedges for serving
Instructions
1. Place diced potatoes in a pot of salted cold water, bring to a boil and cook until just tender, 8–10 minutes. Drain and set aside.
2. Meanwhile, poach the shark fillets in simmering water or fish stock for 7–9 minutes until opaque and cooked through. Remove, let cool slightly, then flake into large chunks, discarding any bones.
3. In a large skillet over medium heat, melt 2 tbsp (30 g) butter with 2 tbsp (30 ml) vegetable oil. Add the chopped onion and bell pepper and sauté until softened, about 5 minutes. Add garlic and scallions and cook 1 minute more.
4. Stir in the tomato paste and Worcestershire sauce, cooking 1–2 minutes to combine. Add the cooked potatoes and gently toss to coat, allowing some edges to brown, about 4–5 minutes.
5. Add the flaked shark, thyme, lemon juice, salt, and pepper. Gently fold to combine, pressing lightly so some potato pieces break to bind the hash. Cook another 3–4 minutes until everything is heated through and slightly crisp in spots.
6. Remove from heat, stir in chopped parsley and adjust seasoning. Serve hot with lemon wedges and hot sauce on the side.
