- 6 slices back bacon, approx. 8 oz (225 g) total - 4 pork sausages, approx. 3.5 oz (100 g) each - 8 oz (225 g) black pudding, sliced into ½-inch (1.2 cm) rounds - 8 oz (225 g) white pudding, sliced into ½-inch (1.2 cm) rounds - 4 large eggs, approx. 1.8 oz (50 g) each - 2 medium potatoes, about 1 lb (450 g), peeled and sliced into ¼-inch (6 mm) rounds or diced - 6 oz (170 g) button mushrooms, halved or quartered - 2 medium tomatoes, halved, about 8 oz (225 g) - 2 tbsp (30 ml) vegetable oil - 2 tbsp (30 g) butter - 1 small onion, thinly sliced — about 4 oz (115 g) - Salt and freshly ground black pepper to taste - 2 tbsp (8 g) chopped fresh parsley - Soda bread or brown bread, to serve (optional)
1. Parboil the potato slices or diced potatoes in lightly salted water for 6–8 minutes until just tender, then drain and pat dry. Heat 1 tbsp (15 ml) vegetable oil and 1 tbsp (15 g) butter in a large frying pan over medium-high heat and fry the potatoes in batches until golden and crisp, about 6–8 minutes per batch. Transfer to a warm oven (200°F / 95°C) to keep warm. 2. In the same pan, add remaining 1 tbsp (15 ml) oil. Fry the bacon slices until crisp to your liking, then remove and keep warm. Add the sausages and cook, turning frequently, until browned and cooked through, about 10–12 minutes (internal temperature 160°F / 71°C). Remove and keep warm. 3. Add the black and white pudding rounds to the pan and fry over medium heat until crisp at the edges, about 2–3 minutes per side. Remove and keep warm with the other cooked items. 4. Add the onions and mushrooms to the pan, sauté for 3–4 minutes until softened, then push to the side and add the tomato halves cut-side down. Cook the tomatoes until slightly charred and softened, about 2–3 minutes. 5. Clear a space in the pan (or use a second smaller pan) and fry the eggs sunny-side up or to your preference, seasoning with salt and pepper. 6. To serve, arrange the potatoes, bacon, sausages, black and white pudding, mushrooms, tomatoes and eggs on warmed plates. Sprinkle with chopped parsley and serve immediately with slices of soda bread or brown bread.
