Ingredients

- 2 cups (400 g) glutinous (sticky) rice
- Water for soaking and steaming (as required)
- 1/4 tsp (about 1 g) tapai starter (ragi) or active dry yeast ground and warmed (adjust per starter instructions)
- 2 tbsp (25 g) granulated sugar (optional, to aid fermentation)
- Banana leaves or a clean glass/plastic container for wrapping or storing
- 1 tsp (5 ml) white vinegar (optional, to adjust acidity after fermentation)

Instructions

1. Rinse the glutinous rice under cold water until water runs clear. Soak the rice in ample cold water for 4–6 hours or overnight.
2. Drain the soaked rice and steam in a bamboo steamer or a tight-fitting steamer for 30–40 minutes until the grains are tender and fully cooked. Spread the hot steamed rice on a clean tray to cool to warm (not hot) — around 35–40°C (95–104°F).
3. Break up any clumps so the rice is loose and passes easily between fingers. If using sugar, sprinkle the 2 tbsp (25 g) evenly over the warm rice and mix to distribute.
4. Evenly sprinkle the tapai starter (ragi) over the cooled, slightly warm rice. Thoroughly but gently mix 2–3 minutes to ensure the starter contacts most grains. The rice should be warm but not hot to preserve the starter's activity.
5. Portion the inoculated rice into clean glass, ceramic, or food-grade plastic containers, or wrap in banana leaves to form compact parcels. Press lightly to remove large air pockets, then close containers or wrap parcels securely.
6. Place containers in a warm, draft-free location at about 25–32°C (77–90°F). Allow to ferment undisturbed for 48–72 hours; timing depends on ambient temperature and desired sourness/alcohol level. Check at 48 hours: rice should smell pleasantly sweet-sour and have softened further.
7. When fermentation reaches the desired flavor and aroma, transfer to the refrigerator to slow fermentation. If needed, sprinkle 1 tsp (5 ml) white vinegar and fold gently to adjust acidity for serving.
8. Serve tapai at room temperature as a staple carbohydrate alongside savory dishes, grilled fish, or as a fermented accompaniment. Tapai may also be eaten by itself as a sweet-sour snack. Store refrigerated and consume within 5–7 days.
