Ingredients

- 3 tbsp (45 ml) vegetable oil
- 2 tbsp (30 g) ghee
- 1 tbsp (15 g) butter
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp (30 g) fresh ginger, grated
- 1–2 green chilies, slit (optional)
- 1 lb (450 g) potatoes, peeled and cut into 1-inch (2.5 cm) cubes
- 2 lb (900 g) bone-in chicken pieces (legs and thighs), skin removed
- 1 cup (240 g) plain yogurt
- 1 tbsp (15 ml) lemon juice
- 1 tsp (5 g) turmeric
- 2 tsp (4 g) ground coriander
- 1 tsp (2 g) ground cumin
- 1 tsp (2 g) paprika
- 6 whole cardamom pods, lightly crushed
- 4 whole cloves
- 1 cinnamon stick, 2–3 inches (5–7.5 cm)
- 1 bay leaf
- 3 cups (570 g) basmati rice, rinsed until water runs clear
- 5 cups (1.2 l) chicken stock or water, hot
- 1 pinch saffron threads soaked in 1/4 cup (60 ml) warm milk
- 1/2 cup (15 g) fresh cilantro, chopped
- 1/4 cup (15 g) fresh mint, chopped
- 1/4 cup (35 g) fried onions or crisp shallots (optional, for garnish)
- Salt to taste

Instructions

1. In a large bowl combine yogurt, lemon juice, turmeric, ground coriander, ground cumin, paprika, half the garlic and ginger, and 1 tsp salt. Add the chicken pieces, coat well, and marinate at least 1 hour or overnight in the refrigerator.
2. Heat oil and ghee in a heavy-bottomed pot over medium heat. Add whole cardamom, cloves, cinnamon stick, and bay leaf and fry for 30 seconds until fragrant.
3. Add sliced onions and cook, stirring, until deep golden and softened, about 10–12 minutes. Remove about 1/4 cup of the onions for garnish if desired.
4. Stir in remaining garlic, ginger, and green chilies for 1 minute. Add marinated chicken and spread evenly; cook over medium heat until the chicken is browned on all sides, about 8–10 minutes.
5. Add potato cubes, cover, and cook 5 minutes. Pour in hot stock or water, bring to a simmer, then adjust salt. Cover and simmer gently until chicken is nearly cooked and potatoes are tender, about 15–20 minutes.
6. While chicken simmers, parboil the rinsed basmati rice in boiling salted water for 5–6 minutes until rice is about 70% cooked. Drain thoroughly.
7. Remove cinnamon stick and bay leaf from the pot. Spread half of the par-cooked rice over the chicken and potatoes. Sprinkle half of the chopped cilantro and mint over the rice, then drizzle half the saffron milk. Layer the remaining rice, herbs, and saffron milk on top. Cover tightly with a lid; cook on very low heat (place a heat diffuser if available) for 18–22 minutes to steam until rice is fully cooked and flavors meld.
8. Turn off heat and let rest 10 minutes. Gently fluff to mix layers, garnish with fried onions and remaining herbs, and serve hot.
