Ingredients

- 1 lb (454 g) ground pork (coarsely minced pork shoulder)
- 2 tbsp (30 ml) vegetable oil
- 4 cloves (about 12 g) garlic, minced
- 1 medium onion, thinly sliced
- 2 tsp (6 g) ground turmeric
- 1 tbsp (15 ml) fish sauce
- 1 tbsp (15 ml) light soy sauce
- 1 tsp (5 g) palm sugar or brown sugar
- 2 green chilies, thinly sliced
- 2 tbsp (10 g) toasted rice powder
- 1/4 cup (10 g) cilantro, chopped
- 2 scallions, thinly sliced
- 1 tbsp (15 ml) fresh lime juice
- Steamed jasmine rice, to serve

Instructions

1. Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and sliced onion and sauté until the onion softens and the garlic is fragrant, about 2–3 minutes.
2. Add the ground pork to the pan and break it up with a spatula. Cook until it begins to brown, about 6–8 minutes.
3. Sprinkle in the turmeric and stir to coat the meat. Add fish sauce, soy sauce, and palm sugar; stir and continue to cook until the pork is well caramelized and most of the liquid has evaporated, about 4–6 minutes.
4. Stir in the sliced green chilies and toasted rice powder; cook 1–2 minutes more so the toasted rice integrates and gives a slightly nutty texture.
5. Remove from heat, then mix in the chopped cilantro, scallions, and lime juice. Adjust seasoning with extra fish sauce or salt if needed.
6. Serve immediately over steamed jasmine rice, garnished with additional scallions and lime wedges.
