Ingredients
- 3 fish fillets, firm white fish (such as snapper or mahi-mahi), approx. 6 oz (170 g) each (total ~18 oz / 510 g)
- 2 cups (480 ml) coconut milk (full fat)
- 1 cup (240 ml) water or fish stock
- 2 medium taro corms, peeled and cut into 1-inch (2.5 cm) cubes, about 1.5 lb (680 g)
- 1 medium onion, thinly sliced (about 1 cup / 150 g)
- 2 cloves garlic, minced
- 1 medium tomato, chopped (about 4 oz / 115 g)
- 1 small hot chili (scotch bonnet or bird’s eye), sliced, optional
- 2 tbsp (30 ml) vegetable oil or coconut oil
- 1 tbsp (15 ml) fresh lime juice or lemon juice
- 1 tsp (5 g) salt, plus more to taste
- 1/2 tsp (2 g) ground black pepper
- 2 cups (about 60 g) island greens or spinach, roughly chopped
- 2 scallions, sliced (about 1 oz / 30 g)
- Fresh cilantro or parsley for garnish (optional)
Instructions
1. In a large heavy pot or deep skillet, heat the oil over medium heat and sauté the onion until translucent, about 4–5 minutes; add garlic and cook 1 minute until fragrant.
2. Add chopped tomato and sliced chili and cook 2–3 minutes until tomatoes begin to soften.
3. Stir in taro cubes, coconut milk, and water or stock; bring to a gentle simmer, cover, and cook until taro is nearly tender, about 15–20 minutes depending on size.
4. Season the broth with salt and pepper. Nestle the fish fillets into the simmering liquid, spoon some broth over the fish, cover, and simmer gently 8–10 minutes until fish is opaque and flakes easily.
5. Add the chopped greens and scallions, stir gently, and cook 1–2 minutes until wilted. Stir in lime juice and taste to adjust seasoning.
6. Serve the Vai Siaine hot in shallow bowls with broth spooned over, accompanied by steamed rice, boiled cassava, or roasted breadfruit. Garnish with fresh cilantro if desired.
