Ingredients

- 1 lb (454 g) sushi-grade ahi tuna, trimmed and cut into 1/2-inch (1.3 cm) cubes
- 3 cups (570 g) cooked short-grain white rice (about 1 1/2 cups uncooked)
- 3 tbsp (45 ml) rice vinegar
- 1 tbsp (15 g) granulated sugar
- 1 tsp (5 g) kosher salt
- 3 tbsp (45 ml) soy sauce
- 1 tbsp (15 ml) toasted sesame oil
- 2 tbsp (30 ml) mayonnaise
- 1-2 tbsp (15-30 ml) sriracha or to taste
- 1 tsp (5 ml) gochujang (optional for depth)
- 2 tsp (10 ml) finely grated fresh ginger
- 2 scallions, thinly sliced (white and green parts separated)
- 1 small cucumber, thinly sliced or julienned
- 1 ripe avocado, sliced
- 2 tbsp (30 ml) toasted sesame seeds
- 1 tbsp (15 ml) vegetable oil or neutral oil for searing (optional)
- 1 sheet nori, toasted and torn, or 1 tbsp (6 g) furikake (optional)
- 1 lime, cut into wedges
- 1/4 cup (60 g) pickled ginger or thinly sliced radish for garnish (optional)

Instructions

1. Rinse cooked rice briefly and fold in rice vinegar, sugar, and salt while still warm; let cool slightly.
2. In a bowl whisk together soy sauce, sesame oil, mayonnaise, sriracha, gochujang (if using), and grated ginger to make the spicy dressing; taste and adjust heat.
3. Add the tuna cubes to the dressing and toss gently to coat; stir in the white parts of the scallions and let marinate 5–10 minutes in the refrigerator.
4. If using, heat vegetable oil in a hot skillet and briefly sear tuna cubes 10–15 seconds per side for a slightly seared exterior, then cool; otherwise leave tuna raw.
5. Divide seasoned rice among four bowls. Top each bowl with marinated tuna, cucumber, avocado slices, green scallion tops, toasted sesame seeds, torn nori or furikake, and pickled ginger or radish if using.
6. Serve immediately with lime wedges on the side for squeezing over the bowl.
