Ingredients

- 12 oz (340 g) dried egg noodles or chow mein noodles
- 1 lb (454 g) boneless skinless chicken breasts, thinly sliced
- 2 tbsp (30 ml) vegetable oil, divided
- 2 tbsp (30 ml) soy sauce, plus 1 tbsp (15 ml) for marinade
- 1 tbsp (15 ml) oyster sauce
- 1 tsp (5 ml) sesame oil
- 1 tbsp (15 ml) cornstarch
- 2 cloves garlic, minced
- 1 tbsp (15 g) fresh ginger, minced
- 1 medium yellow onion, thinly sliced
- 1 cup (120 g) shredded cabbage
- 1 cup (128 g) julienned carrots
- 1 cup (120 g) sliced celery
- 1/2 cup (75 g) sliced green bell pepper
- 3 scallions, sliced on the diagonal
- 2 large eggs, beaten
- 1/2 cup (120 ml) chicken stock or water
- 1 tsp (5 g) sugar
- Salt and freshly ground black pepper to taste

Instructions

1. Cook the egg noodles according to package directions until just tender, drain, toss with 1 tsp (5 ml) oil to prevent sticking, and set aside.
2. In a bowl combine the sliced chicken with 1 tbsp (15 ml) soy sauce and 1 tbsp (15 ml) cornstarch; mix and let sit 10 minutes to lightly marinate.
3. Heat a large wok or heavy skillet over high heat. Add 1 tbsp (15 ml) vegetable oil and swirl. Add the beaten eggs, scramble quickly, then remove eggs and set aside.
4. Add the remaining 1 tbsp (15 ml) oil to the hot wok. Stir-fry the marinated chicken until just cooked through, about 3–4 minutes. Remove and set aside.
5. Add onion, garlic, and ginger to the wok and stir-fry 1 minute until fragrant. Add carrots, celery, and bell pepper and cook 2–3 minutes until vegetables are crisp-tender.
6. Return chicken and scrambled eggs to the wok. Add cooked noodles, soy sauce, oyster sauce, sesame oil, chicken stock, and sugar. Toss vigorously for 2–3 minutes until noodles are evenly coated and heated through.
7. Stir in cabbage and scallions and toss another minute. Taste and adjust with salt, pepper, or extra soy sauce as needed.
8. Serve immediately, garnished with additional scallions if desired.
