Ingredients
- 1 lb (454 g) ground pork
- 8 oz (225 g) ground beef
- 1 small onion, finely grated (about 3 oz / 85 g)
- 1 large egg
- 3/4 cup (75 g) fresh breadcrumbs
- 1/3 cup (80 ml) whole milk
- 1 tsp (5 g) salt
- 1/2 tsp (1 g) white pepper
- 1/4 tsp (1 g) ground nutmeg
- 2 tbsp (30 g) butter, divided
- 2 tbsp (30 ml) neutral oil (canola or sunflower)
- 2 tbsp (30 g) all-purpose flour
- 2 tbsp (30 ml) mild curry powder
- 3 cups (710 ml) chicken stock
- 1/2 cup (120 ml) heavy cream
- 1 small apple, peeled and diced (about 4 oz / 115 g)
- 1/4 cup (40 g) raisins (optional but traditional on Bornholm)
- 2 cups (370 g) long-grain rice, uncooked (for serving)
- Salt and white pepper to taste
Instructions
1. In a small bowl, soak the breadcrumbs in milk until absorbed, about 5 minutes. In a mixing bowl combine ground pork, ground beef, grated onion, egg, soaked breadcrumbs, salt, white pepper, and nutmeg. Mix gently until just combined; avoid overworking. Form into walnut-sized meatballs (about 24–28).
2. Heat 1 tbsp butter + 1 tbsp oil in a large skillet over medium heat. Brown meatballs in batches, turning to color all sides but do not cook through; transfer to a plate and keep warm.
3. In the same skillet add remaining 1 tbsp butter. Reduce heat to medium-low, stir in flour and cook 1 minute to form a roux. Add curry powder and stir 30 seconds until fragrant.
4. Gradually whisk in chicken stock, ensuring no lumps. Bring to a simmer, then stir in cream. Add diced apple and raisins and return meatballs to the sauce. Simmer gently, uncovered, for 10–12 minutes until meatballs are cooked through and sauce has thickened. Adjust seasoning with salt and white pepper.
5. Meanwhile cook rice according to package instructions (about 2 cups rice to 4 cups water) until tender and fluffy.
6. Serve meatballs and curry sauce over steamed rice. Spoon extra sauce and fruit over the top. Offer extra curry powder or chopped parsley at the table if desired.
